Bay of Fires have been doing remarkable work in Tasmania for years - sourcing fruit from carefully selected sites across the island, letting the vineyard do the talking, and keeping winemaking intervention to an absolute minimum. The philosophy is simple: great pinot is grown, not manufactured. And when your fruit comes from sites this good, restraint in the winery is the smartest move you can make. What ends up in the glass is genuinely stunning. Deep, vivid red-purple colour, a nose that layers dark cherry, toasty nutty complexity and a whisper of savoury reduction, and a palate that's full and plush without ever losing its elegance.
