Don't worry, try one of these

Why do we love this wine?

Ask anyone, serious Coonawarra cabernet like this is hard to get your hands on. What you won’t find in this wine, is that peppermint choc-chip ice-cream flavour. Rather, you’d find a subtle, smooth cedar, tobacco and dark chocolate characters with fine elegant tannins that effortlessly slide down the throat. Even the most staunch lover of shiraz will agree that there’s no better red wine match with slow cooked lamb than aged Cabernet and one can only imagine how good this will be after an hour in the decanter. This one's half a decade old, but it's still looking youthful, a positive sign for a decade or more still to come.

Frequently Asked Questions

Coonawarra's unique terra rossa soil over limestone creates ideal conditions for Cabernet Sauvignon, producing wines with exceptional structure and longevity. This region is renowned for avoiding the minty eucalyptus character that can dominate other Australian Cabernets, instead delivering the elegant cedar and tobacco notes found in this 2019 vintage. The cool climate and ancient soils allow for slow ripening, resulting in the fine tannins and balanced acidity that make Coonawarra Cabernet among Australia's most cellar-worthy reds.

An hour in the decanter will significantly enhance this full-bodied Cabernet, allowing the tight tannins to soften and the complex aromatics to fully express themselves. At five years old, this wine is still quite youthful and benefits from aeration to reveal its cedar, tobacco, and dark chocolate layers. For optimal results, decant at room temperature and serve at 16-18°C, which will showcase the wine's elegant structure while maintaining its rich, velvety mouthfeel.

The wine's full-bodied structure and fine tannins create an ideal bridge between the rich, fatty textures of slow-cooked lamb and the meat's earthy flavours. Cabernet Sauvignon's natural acidity cuts through the richness while its cedar and tobacco notes complement the caramelised, roasted elements developed during slow cooking. The wine's dark chocolate undertones also harmonise beautifully with herbs like rosemary and thyme commonly used in lamb preparations, creating a classic pairing that enhances both the food and wine.

Despite being five years old, this Cabernet is still showing youthful characteristics, indicating excellent cellaring potential for another decade or more. Premium Coonawarra Cabernets from quality vintages like 2019 typically reach their peak between 8-15 years of age, developing greater complexity and tertiary flavours. The wine's current elegant tannin structure and balanced acidity suggest it will continue evolving gracefully, with the cedar and tobacco notes likely to become more pronounced while maintaining its fruit integrity.

The consistent high scores from respected critics like James Halliday (94pts) and Wine Showcase (95pts) indicate exceptional quality and winemaking across multiple evaluation criteria. These ratings reflect the wine's outstanding balance, complexity, and ageing potential, with the Gold Medal from Wine Showcase Magazine further validating its premium status. Such unanimous critical acclaim, combined with old vine and single vineyard designations, suggests this represents outstanding value for a wine of this calibre and provenance.
