This is a wine that encapsulates everything that we love about Australia’s most iconic cabernet region, Coonawarra. Deep, dark-fruited intensity, met with smooth, well-integrated oak and that eucalypty hint that we all know so well. This lot have created an absolute cracker here - no surprises, they do every year.

Why do we love this wine?

From the exceptional 2021 vintage, this is full-bodied cabernet that lets the terroir do the talking. Produced by certified Coonawara royalty, it’s bursting with ripe blackcurrant, blueberry and boysenberry, but layered with distinctive mint and eucalypt that let you know exactly where this wine's from. Eighteen months in a mix of French and American oak (35% new) brings a lick of toasty vanilla, spice and richness to the palate, while fine, mature tannins and bright acidity keep it all perfectly in check. Open-top fermentation and mature vines have lent a softness and depth to the wine, making it immensely enjoyable now, with the structure to cellar confidently for 8-10 years. It’s bold, it’s balanced, to be honest, in our eyes, it's perfect.

Frequently Asked Questions

This wine showcases the distinctive terroir signatures that make Coonawarra legendary - the characteristic mint and eucalyptus notes that arise from the region's unique terra rossa soil over limestone. These herbaceous qualities perfectly complement the rich blackcurrant and berry flavours, creating a complexity that's unmistakably Coonawarra. The combination of open-top fermentation and mature vines adds an extra layer of sophistication that elevates it beyond typical regional examples.

The 18-month maturation in a blend of French and American oak (35% new) creates a beautiful marriage of Old and New World influences. French oak contributes elegant tannin structure and subtle spice notes, while American oak adds the toasty vanilla sweetness that complements the wine's natural fruit intensity. The restrained use of new oak ensures the distinctive Coonawarra terroir characteristics remain prominent rather than being overwhelmed by wood flavours.

The 2021 vintage delivered ideal growing conditions that allowed the grapes to achieve perfect phenolic ripeness while retaining bright natural acidity. This balance is crucial for Cabernet Sauvignon, as it ensures the wine has both the concentration for immediate enjoyment and the structural backbone for extended cellaring. The vintage's success is reflected in the wine's impressive 95-point rating and multiple gold medals, indicating exceptional quality across the board.

This Cabernet offers the best of both worlds - it's absolutely delicious now thanks to the softness achieved through open-top fermentation and mature vine fruit, yet has the tannin structure and acidity to develop beautifully over 8-10 years. Drinking it young showcases the vibrant fruit and oak integration, while cellaring will allow the distinctive mint and eucalyptus notes to integrate further and develop more complex secondary flavours. The choice depends on whether you prefer youthful exuberance or aged complexity.

The wine's robust tannin structure and rich fruit concentration make it perfect for red meat dishes, particularly grilled or roasted lamb where the mint notes create a natural flavour bridge. The eucalyptus characteristics also pair beautifully with game meats and herb-crusted beef. For cheese pairings, try aged cheddar or blue cheese - the wine's bright acidity cuts through rich, creamy textures while the fruit intensity stands up to strong flavours.
