Why do we love this wine?

Château Pavie is one of Saint-Émilion's most celebrated - and most debated - estates. Love them or find them polarising, one thing is completely undeniable: the 2016 is magnificent. Deep, concentrated and breathtakingly complex - violets, crushed blueberry, dark cherry and lavender on the nose, with a palate that's full-bodied, saline and endlessly layered. The tannins are firm and ripe, the freshness is seamless, and the finish goes on longer than most conversations worth having. This needed time. And it got it. That said, this will still reward patience spectacularly. But if you can't wait - and honestly, who could blame you - decant generously and prepare to be genuinely astonished.

The firm, ripe tannins and seamless freshness provide the backbone for extended ageing, during which the intense fruit flavours will integrate further and develop secondary characteristics like tobacco, leather, and earth. Peak drinking will likely occur between 2025-2040, though it will remain exceptional well beyond that timeframe.

The wine's rich concentration and firm tannin structure make it ideal for robust dishes like slow-braised beef, lamb with herbs, or aged hard cheeses. The saline minerality and dark fruit profile complement game meats particularly well, while the wine's complexity can stand up to dishes with earthy elements like mushrooms or truffles.
