Wow, what a wine. A must-have for any McLaren Vale die-hards or pretty much anyone with a mouth and a heart. Rich dark fruit, chocolatey oak and fine-grained tannins. A classic Aussie style with 8+ years under the belt, primed and raring to go.

Why do we love this wine?

Di Fabio Estate are a real wine-producer's producer. With a history in Australia dating back to the mid 60's, and much much longer in Italy, the Di Fabio family earned their stripes selling grapes to some of McLaren Vale's biggest names. As the years went by and whispers of their fruit's fantastic quality grew louder, they transitioned into full wine production and when we taste this gorgeous drop, we're so happy that they did. With premium fruit from old bush-vines in the Blewitt Springs sub-region, and a little bit of generational know-how, Di Fabio has crafted the ultimate people-pleaser. A dense, dark fruited wine that, although full-bodied, doesn't feel sluggish or clunky on the palate. Lively and rich blackberries and dark cherries are balanced by milk chocolate and sweet spice, a result of a very comprehensive oak treatment regime. This is a wine that was drinking beautifully five years ago, drinks beautifully today and will still be drinking beautifully in five years time. If you're a McLaren Vale fan, do yourself a favour.

I tasted this wine alongside its 2016 equivalent (both $80) and of the two, this is the fuller and richer wine. Indeed it’s a better wine all around. It’s a full-bodied shiraz with blackberry, sweet plum, milk chocolate and various dried herbs characters washing confidently through the palate. It shows some leathery/dusty development – it’s nearly seven years old, after all – but the fruit is still robust and in control. The other distinguishing feature about this wine is its tannin; it’s well balanced in general but there’s quite bit of pucker to this wine, which help lend it an air of seriousness. This wine will drink well for at least the next handful of years.

Frequently Asked Questions

Bush-vines are ungrafted, low-yielding vines that grow without trellising support, forcing their roots deep into the soil for water and nutrients. At Di Fabio's Blewitt Springs vineyard, these old bush-vines produce intensely concentrated fruit with exceptional flavour complexity. The stress of this growing method, combined with McLaren Vale's Mediterranean climate, creates the dense, dark fruit character that defines this premium Shiraz.

This Shiraz demonstrates exceptional cellaring potential, having been delicious at release and continuing to evolve beautifully. The 2018 vintage has developed tertiary flavours while retaining its vibrant fruit character, and the structured tannins will continue softening over the next five years. McLaren Vale Shiraz from quality producers like Di Fabio typically peaks between 8-15 years, making this an ideal time to enjoy or cellar further.

Di Fabio employs a sophisticated oak program using different barrel types, toast levels, and aging periods to build complexity without overwhelming the fruit. This approach creates the wine's signature milk chocolate and sweet spice notes while maintaining balance in the full-bodied structure. The oak integration is so seamless that it enhances rather than masks the premium bush-vine fruit character.

Blewitt Springs sits in McLaren Vale's elevated eastern foothills, where ancient sand over clay soils and cooling afternoon breezes create ideal Shiraz conditions. The sub-region's unique terroir produces wines with distinctive elegance and mineral complexity, differentiating them from the broader McLaren Vale style. This geological diversity explains why Di Fabio's fruit was so sought-after by major producers before they began making their own wine.

While McLaren Vale is known for powerful, rich Shiraz, Di Fabio achieves full-bodied intensity without the heaviness that can plague the region's wines. The old bush-vine fruit provides natural concentration and complexity, while their winemaking expertise ensures the wine remains lively and balanced. This represents the modern McLaren Vale approach - maximum flavour impact with refined structure and drinkability.
