Why do we love this wine?

Di Fabio Estate are a real wine-producer's producer. With a history in Australia dating back to the mid 60's, and much much longer in Italy, the Di Fabio family earned their stripes selling grapes to some of McLaren Vale's biggest names. As the years went by and whispers of their fruit's fantastic quality grew louder, they transitioned into full wine production and when we taste this gorgeous drop, we're so happy that they did. With premium fruit from old bush-vines in the Blewitt Springs sub-region, and a little bit of generational know-how, Di Fabio has crafted the ultimate people-pleaser. A dense, dark fruited wine that, although full-bodied, doesn't feel sluggish or clunky on the palate. Lively and rich blackberries and dark cherries are balanced by milk chocolate and sweet spice, a result of a very comprehensive oak treatment regime. This is a wine that was drinking beautifully five years ago, drinks beautifully today and will still be drinking beautifully in five years time. If you're a McLaren Vale fan, do yourself a favour.

Bush-vines are ungrafted, old vines that grow as free-standing shrubs rather than being trained on wires. These ancient vines, particularly in Blewitt Springs' sandy soils, produce smaller yields of intensely concentrated fruit. The deep root systems access water and nutrients from lower soil layers, creating wines with exceptional depth and complexity that younger, trellised vines simply cannot match.

Blewitt Springs is renowned for its ancient sand-over-clay soils and elevation that provides cooling afternoon breezes. This unique terroir allows Shiraz grapes to ripen slowly while retaining natural acidity, resulting in wines that are full-bodied yet maintain elegance. The sandy soils also contribute to the wine's distinctive spice notes and fine tannin structure that McLaren Vale is famous for.

The 2019 vintage in McLaren Vale was exceptional due to ideal growing conditions - a cool, wet winter followed by a warm, dry summer with no extreme heat events. This allowed for extended hang-time, developing intense flavours while preserving natural acidity. The result was wines with remarkable concentration and balance, making 2019 one of the standout vintages of the decade for Australian Shiraz.

This wine's rich blackberry and dark cherry flavours, combined with milk chocolate and sweet spice notes, make it perfect for hearty dishes. Think slow-cooked lamb with rosemary, aged beef steaks, or rich game meats like venison. The wine's comprehensive oak treatment and full body also complement strong cheeses, barbecued meats, and dishes with earthy mushrooms or dark chocolate elements.

This Shiraz demonstrates excellent cellaring potential, having already shown beautiful drinking from release and continuing to evolve gracefully. The wine's structure, tannins, and acidity suggest it will continue developing complexity for another 5-10 years. While delicious now, patient collectors will be rewarded as the oak integrates further and secondary flavours of leather, tobacco, and earth emerge to complement the primary fruit.
