Why do we love this wine?

A tried and true Mofo favourite. We love this wine for many reasons, but most of all it's the way it jumps out of the glass. Its one of those wines you're reluctant to drink because there is so much joy to be had in just smelling it. On the palate herbaceous blackcurrant leaf and herbal tea flank what is a powerful fruit core. Dark berry compote and quince dominate. Fresh and bright acidity (aided, in part, by the splash of roussanne that's added to the ferment) gather and drive the fruit density through a long, lasting finish. As far as the Wild Pixie is concerned, this is the best incarnation yet.

According to the winemaker, this 2022 vintage represents the best incarnation of Wild Pixie yet. The exceptional quality likely stems from ideal growing conditions in McLaren Vale that year, allowing the Shiraz grapes to develop intense aromatics and concentrated fruit flavours. The addition of a splash of roussanne during fermentation also contributes fresh acidity that perfectly balances the wine's power, creating a more harmonious and age-worthy expression than previous vintages.

The small addition of roussanne (a white grape variety) to the Shiraz ferment is a traditional winemaking technique used to enhance freshness and acidity. This practice, known as co-fermentation, is legal under Australian wine laws as long as the primary variety comprises at least 85% of the blend. The roussanne doesn't change the wine's character dramatically but adds a bright, mineral edge that lifts the dense fruit and prevents the full-bodied style from becoming too heavy or cloying.

Given the wine's exceptional aromatic intensity, serve it at cellar temperature (16-18°C) in large Burgundy-style glasses to maximise the bouquet. Decant the wine 30-60 minutes before serving to allow the herbaceous blackcurrant and dark berry aromas to fully develop. The wine's aromatic complexity means it's worth taking time to appreciate the nose before drinking - swirl gently and inhale deeply to experience the full spectrum of scents from herbal tea to quince.

The wine's powerful fruit core and herbaceous notes make it ideal for rich, savoury dishes that can match its intensity. Try it with grilled lamb with rosemary, beef brisket with dark berry sauces, or aged hard cheeses like vintage cheddar. The bright acidity and long finish also complement dishes with earthy elements like mushroom risotto or game meats, while the chocolate and tobacco notes pair beautifully with barbecued meats featuring smoky, charred flavours.

As a full-bodied McLaren Vale Shiraz from a five-star rated producer, this wine has excellent cellaring potential of 8-12 years from vintage. The 2022 is drinking beautifully now but will continue to develop complexity over the next 5-7 years as the tannins integrate and secondary flavours emerge. The wine's bright acidity and concentrated fruit structure provide the backbone for graceful ageing, though the exceptional aromatics make it tempting to enjoy in its vibrant youth.
