This wine hasn't been released since 2012. The fruit simply hasn't made the cut. That's the standard we're dealing with here. When a wine like this comes back after more than a decade away, you pay attention. Dave Brooks at Halliday certainly did - 95 points, calling it "a cassis-pure finish that carries on for ages" with "tannins toothsome and fine." High praise from someone who doesn't hand it out lightly.

Why do we love this wine?

Saltram have been part of the Barossa story since 1859 - one of the region's true founding names, with a history so deeply woven into the fabric of Australian wine that you simply cannot tell one story without the other. The Edward Salter Cabernet is their most personal release, a tribute to the man who first introduced Cabernet Sauvignon to the estate over a century ago. Violet, cassis and mulberry on the nose, with a depth and generosity that builds beautifully in the glass. The palate is full-bodied and plush - blackberry, blood plum and dark chocolate rolling across fine, velvety tannins and a seamless structure that carries the finish long and clean. Built to cellar. Outstanding to drink right now.

Frequently Asked Questions

The exceptional 95-point rating reflects this wine's masterful expression of Barossa Valley terroir and Saltram's winemaking expertise. The combination of rich blackberry fruit, savoury black olive complexity, and well-integrated oak creates a harmonious full-bodied wine that showcases the premium quality Saltram is renowned for. Such high scores from Halliday typically indicate wines with excellent structure, depth, and ageing potential that will reward cellaring.

The Barossa Valley's warm continental climate and ancient soils create ideal conditions for producing intensely flavoured Cabernet Sauvignon with the rich, full-bodied character evident in this wine. The region's ability to ripen Cabernet Sauvignon to full phenolic maturity results in the deep blackberry flavours and robust tannin structure. Barossa's consistent vintage conditions also allow winemakers like Saltram to craft wines with the complexity and balance that earned this bottling its prestigious accolades.

This wine's rich blackberry fruit and savoury black olive notes make it an excellent match for grilled red meats, particularly lamb with Mediterranean herbs or beef with rosemary and garlic. The oak integration and full-bodied structure can stand up to robust flavours like aged hard cheeses, mushroom-based dishes, or even dark chocolate desserts. The wine's tannin structure also makes it ideal for cutting through rich, fatty foods while its fruit intensity complements bold, umami-rich preparations.

While this wine is approachable now, premium Barossa Cabernet Sauvignon with this level of critical acclaim typically develops beautifully over 8-12 years. The 2023 vintage's youth means the tannins will soften and integrate further, while the blackberry fruit will evolve into more complex secondary flavours. Saltram's winemaking style and the wine's 95-point rating suggest it has the structure and balance necessary for extended cellaring, with peak drinking likely between 2028-2035.

Saltram's 5 Red Star Halliday rating places them among Australia's elite wineries, reflecting their consistent quality and winemaking excellence since 1859. Their deep understanding of Barossa terroir allows them to craft wines that balance power with elegance, as demonstrated by this Edward Salter bottling's ability to achieve both richness and finesse. The producer's long history in the region means they have access to premium vineyard sites and possess the generational knowledge to maximise the potential of varieties like Cabernet Sauvignon.
