Why do we love this wine?

Full of oomph and bravado, this strapping back-vintage cab is not for the faint of heart. Packed with succulent, ripe berry fruits, charry and vanillin oak and leather – this is not one to pull the bat away from big, bold flavours. Marked by a toasty oak profile, there's a whack of tobacco, clove and freshly roasted coffee perfuming the nose and palate. This is quite the wine to impress.

Frequently Asked Questions

This 2017 Pimpala Vineyard Cabernet represents a museum-quality release that has had seven years to develop complexity and integration. The extended bottle ageing has allowed the bold tannins to soften while preserving the wine's powerful structure, creating a drinking experience that showcases both youthful vigour and mature sophistication. Back-vintage Cabernets from premium regions like Coonawarra often reveal secondary characteristics like leather and tobacco that weren't present in their youth.

The pronounced toasty oak, vanilla, and charry notes reflect Geoff Merrill's traditional winemaking approach that emphasises bold, uncompromising flavour development. Coonawarra Cabernet Sauvignon naturally possesses the fruit concentration and tannin structure to support generous oak treatment without being overwhelmed. The integration of oak-derived spices like clove with the wine's natural blackcurrant and menthol characteristics creates a complex flavour matrix that's designed to age gracefully over decades.

Coonawarra's famous terra rossa soil over limestone bedrock provides exceptional drainage and mineral complexity that's evident in this wine's structured tannins and distinctive menthol notes. The region's cool maritime climate allows Cabernet Sauvignon to ripen slowly while retaining natural acidity, creating the backbone necessary to support the wine's full-bodied intensity. This terroir combination produces Cabernets with both power and elegance, explaining why this wine can handle such bold oak treatment while maintaining balance.

This strapping Cabernet demands equally robust companions - think slow-braised beef short ribs, grilled lamb with rosemary, or aged hard cheeses like vintage cheddar. The wine's tobacco and coffee notes make it exceptional with barbecued meats where char flavours echo the wine's own toasty oak profile. The full-bodied structure and allspice characteristics also complement rich game dishes or hearty mushroom-based preparations that can match the wine's intensity without being overwhelmed.

A 95-point score from Wine Orbit places this Cabernet in the 'outstanding' category, indicating exceptional quality that significantly exceeds expectations for its price point. This rating, combined with the five-star designation, suggests the wine demonstrates remarkable complexity, balance, and ageing potential despite its bold, uncompromising style. Such high scores for a back-vintage release often indicate that the wine has successfully evolved beyond its initial promise, developing the secondary characteristics that elevate good wines to greatness.
