This is jam packed full of black and red fruit - currants and raspberries mix with bramble and plums. The earthy and vegetal notes chime in late, backing up that initial fruit with some savoury depth.

Why do we love this wine?

Estate fruit from the famed Hollick vineyards in Coonawarra, this is cab sauv like Aussies know and love. Certainly, a little bit of age behind this number has helped to fill out the mid palate, making it rich and dense with threads of fennel and mint throughout. It's very hard not to enjoy this wine- and we're speaking from experience.

Wine Orbit

"Varietally expressive and enticing, showing blackcurrant, tobacco, clove and cedar aromas, followed by a splendidly weighted palate offering succulent fruit intensity with refined texture and finely pitched tannins. Wonderfully structured with harmony and persistency. At its best: now to 2034. $40.00."

Frequently Asked Questions

Coonawarra's famous terra rossa soil over limestone creates ideal conditions for Cabernet Sauvignon, producing wines with distinctive eucalyptus and mint characteristics that you'll find in this Hollick Red Ridge. The region's cool climate allows for slow ripening, developing the complex blackcurrant flavors and structured tannins that have made Coonawarra Australia's premier Cabernet region. This terroir expression is why the wine shows those signature fennel and mint threads alongside rich fruit.

The four years of bottle age have allowed this Cabernet's tannins to soften and integrate, creating the rich, dense mid-palate texture described. During this maturation period, the primary fruit flavors have evolved into more complex secondary characteristics, while the wine's structure has become more harmonious. This aging process is crucial for full-bodied Cabernets, as it transforms what might initially be a powerful but austere wine into something more approachable and layered.

This rich, dense Cabernet Sauvignon pairs beautifully with red meat dishes that can match its intensity - think grilled ribeye, lamb with rosemary, or aged beef. The wine's eucalyptus and allspice notes complement herb-crusted meats, while its full body stands up to rich sauces and strong cheeses. The fennel characteristics also make it excellent with Mediterranean dishes featuring similar herbs.

The 94-point Wine Orbit score and Five Stars rating indicate this is an exceptional example of Australian Cabernet Sauvignon, well above average quality. Wine Orbit is particularly respected for Australian wine evaluation, so their high score suggests this wine successfully showcases Coonawarra's terroir while delivering complexity and balance. The consistent 4.0 Vivino rating across vintages also indicates Hollick maintains reliable quality standards year after year.

While this 2020 is drinking beautifully now with its developed mid-palate richness, quality Coonawarra Cabernet Sauvignon can continue evolving for 10-15 years from vintage. The wine's full-bodied structure and estate fruit quality suggest it has the backbone for further cellaring, where it will develop more tertiary flavors and additional complexity. However, given how approachable it currently is, there's no need to wait if you're eager to experience its current expression of Coonawarra character.
