An exceptional showcase of time and place. This wine could only be from Coonawarra, only from 2021 and - if we're being real - only from Parker Estate. This wine will be drinking beautifully from right now until 2035 - to make a conservative estimate.

Why do we love this wine?

Sourced from Parker Estate's renowned ‘Abbey’ vineyard in southern Coonawarra - where the unique microclimate delivers a longer ripening season and the world-famous terra rossa soils make their mark on every single grape. The result? A tighter tannin structure, deeper fruit concentration, and serious cellar-worthy swagger. That said, this wine is drinking wonderfully already, at such a young age, and those who like their wines with a bit of grunt will find happiness in its graceful austerity. Or, if you're one for cellaring, dig a whole in the backyard, set you're alarm for 2035 and forget about it. The magic of stelvin-sealed bottle development will take care of the rest.

QWine

Woah! A faceplant into a tray of slow-roasted capsicum sets the scene with this new Abbey Vineyard Cabernet from Parker Estate. A rock solid Coonawarra Cabernet, it sees 40% new French oak barriques for 12 months. A curious fabric softener aroma ties itself to those varietal leafy Cabernet aromas, but they blow off soon enough. Blackberries come with the territory along with some boysenberries and mulberries. Bay leaf, dried thyme and sage add a fabulous herbal touch along with a fine shimmer of mint. It's a wine that dries out slowly but possesses a seductive 'come hither' call as it lures you closer. A mighty fine debut. Drink to eight years+

Frequently Asked Questions

Coonawarra's famous terra rossa is a thin layer of iron-rich red clay over limestone bedrock that creates ideal drainage while retaining just enough moisture for the vines. This unique geological combination forces Cabernet Sauvignon roots to dig deep, concentrating flavours and creating the region's signature tight tannin structure. The limestone subsoil also contributes crucial minerality that gives Coonawarra Cabernets their distinctive elegance and ageing potential.

While this Parker Estate Cabernet is already showing beautifully in its youth, it has serious cellaring potential thanks to its structured tannins and concentrated fruit. The wine will continue developing complexity over the next 10-15 years, with the stelvin closure ensuring consistent bottle development. Peak drinking will likely be around 2030-2035, when the tannins fully integrate and secondary flavours of leather and tobacco emerge alongside the primary blackcurrant notes.

This wine's robust tannin structure and cedar-spice profile make it perfect for rich, protein-heavy dishes that can match its intensity. Think slow-braised beef short ribs, grilled lamb with rosemary, or aged hard cheeses like vintage cheddar. The blackcurrant fruit core also pairs beautifully with game meats like venison, while the spice elements complement dishes with herbs like thyme and bay leaves.

James Halliday's Five Red Star rating represents the pinnacle of Australian winemaking excellence, awarded to fewer than 100 wineries nationwide. Parker Estate earned this recognition through consistent quality across their range and their mastery of Coonawarra's unique terroir. Their Abbey Vineyard represents some of the region's most prized terra rossa soil, and their winemaking approach focuses on expressing this exceptional site rather than masking it with heavy-handed techniques.

The stelvin (screw cap) closure on this Parker Estate ensures consistent, controlled ageing without the risk of cork taint or oxidation variability. Unlike traditional cork, screw caps provide an almost perfect seal that allows the wine to develop its primary fruit characters while slowly building complexity. This means every bottle will age predictably, making it ideal for collectors who want confidence in their cellared wines developing as intended over the next decade.
