Aged for 36 months in 50% new French oak - there's no denying it, this is a big boy. That said, we're talking about Sorby Adams here, there's more to this wine than super-premium oak treatment. There's an opulence and generosity here that takes it to the next level and would see this one live for 15+ years in the cellar - easy.

Why do we love this wine?

Behind the wine is Simon Sorby Adams, carrying the legacy of four generations of winemaking heritage, dating back to Reverend Augustus Crichton Adams, 'The Vicar', and Anne Sorby. With a name steeped in tradition and a wine packed with pedigree, this is a Barossa shiraz that commands attention. This is pure Barossa power, an unapologetically bold shiraz from the northern grounds of the region, where the fruit grows darker, richer, and more intense. It opens with a heady mix of ripe black fruits, spiced plum and dark chocolate. As the wine opens up, it's all about concentration: blackcurrant, cocoa and vanilla stacked on top of exotic spice and firm, muscular tannins. Aged for 36 months in premium French oak (half of it new, from tight-grain Francois Frere and Taransaud hogsheads), it’s got serious structure and finesse beneath all that fruit weight. Full-bodied, finely tuned and built for the long haul - this is one to cellar confidently through to 2036.

Wine Orbit

"Offering power and refinement, the wine shows blackberry, toasty oak, star anise, rich floral, and dark chocolate notes on the nose. The sumptuous palate offers plush texture and silky flow, wonderfully enhanced by beautifully melded tannins, making it robust and captivating with a prolonged, sophisticated finish. At its best: now to 2040. 96 Points." - Wine Orbit

Frequently Asked Questions

The Vicar represents the northern Barossa style where extreme heat and ancient soils create darker, more concentrated fruit than southern regions. The 36-month French oak maturation using premium Francois Frere and Taransaud barrels adds exceptional complexity and structure. This extended ageing period is significantly longer than most Australian Shiraz, which typically sees 12-18 months in oak, resulting in deeper integration of fruit and wood elements.

This wine is built for serious cellaring and will continue developing until 2036, giving you 15 years of evolution from vintage. The muscular tannin structure and concentrated fruit will soften and integrate over the next 5-7 years, reaching an optimal drinking window around 2028-2032. The premium French oak and full-bodied nature mean it will reward patient collectors with increased complexity and elegance over time.

The wine's intense dark fruit and chocolate notes make it perfect for rich, protein-heavy dishes like slow-cooked lamb shoulder, aged beef steaks, or game meats like venison. The exotic spice elements complement Middle Eastern or North African cuisine beautifully. The firm tannin structure can handle fatty cuts and strong flavours, while the vanilla and cocoa notes pair exceptionally with dishes featuring dark sauces or mushroom-based preparations.

These exceptional scores reflect the wine's perfect balance of power and finesse - a hallmark of great Barossa Shiraz. The 2021 vintage was particularly outstanding in the Barossa, with ideal ripening conditions creating intense fruit concentration. Critics recognised the wine's layered complexity, from the immediate impact of dark fruits and spice to the sophisticated oak integration and age-worthy tannin structure that promises decades of development.

The Sorby Adams family's deep connection to the Barossa, dating back to Reverend Augustus Crichton Adams, provides access to some of the region's most prized vineyard sites and traditional winemaking knowledge. This generational expertise shows in the wine's confident handling of powerful Barossa fruit - knowing exactly when to harvest, how long to ferment, and which oak regimes will enhance rather than mask the terroir. The result is a wine that honours both tradition and modern winemaking precision.
