Cabernet might play second fiddle to pinot in the Yarra, but when it’s good - it’s really bloody good. This one’s 80% cab, 20% merlot, off vines planted in the late ‘90s, and it’s been given time to settle into itself. This is Yarra cabernet with balance, detail and plenty of heart. It’s a cracking match for anything charred over coals, Sunday roast lamb, or just that midweek “I deserve better” glass.

Don't worry, try one of these

Why do we love this wine?

Handpicked, wild ferment, long rest in French oak, unfined and unfiltered. It’s the real deal - but what’s in the glass? Blackcurrant and raspberry up front, a darker thread of plum, cherry and liquorice running through, and that savoury tomato leaf note that cab lovers chase. A bit of earthy chocolate sneaks in too. Tannins are dusty and satisfying, but the kicker is the brightness in the middle - all high-toned fruit that keeps it lively. The finish on this one is long, dark and leaves you wanting another pour. Drink now while it’s fresh and vibrant, or stash some away - there’s 5-8 years of joy ahead if you’ve got the patience.

Frequently Asked Questions

This wine represents artisanal winemaking at its finest - handpicked grapes undergo wild fermentation using native yeasts, followed by extended maturation in French oak barrels. The unfined and unfiltered approach preserves the wine's natural character and complexity, allowing the terroir to shine through. This traditional method creates wines with greater depth and authenticity compared to commercial alternatives that rely on cultured yeasts and heavy filtration.

While delicious now with its fresh vibrancy and bright fruit character, this wine has excellent cellaring potential of 5-8 years. The dusty tannin structure and French oak integration will allow the wine to develop greater complexity over time, with the primary fruit flavours evolving into more tertiary notes. The 2021 vintage's natural acidity will help preserve the wine's freshness during this maturation period.

The wine's medium body and savoury tomato leaf notes make it incredibly food-friendly, particularly with grilled lamb, beef, or game meats. The earthy chocolate undertones and dusty tannins complement mushroom-based dishes beautifully, while the bright acidity cuts through rich, fatty foods. Try it with aged hard cheeses or herb-crusted roasts to highlight the wine's complex flavour profile.

The savoury tomato leaf note is a hallmark of quality Cabernet Sauvignon and indicates the grapes achieved optimal ripeness while retaining freshness. This herbaceous character comes from compounds called methoxypyrazines, which are more pronounced in cooler climate regions like the Yarra Valley. Rather than being a flaw, this green note adds complexity and is highly prized by Cabernet enthusiasts as it balances the wine's darker fruit flavours.

Wild fermentation uses naturally occurring yeasts from the vineyard and winery environment rather than commercial laboratory strains. This process creates more complex flavour compounds and contributes to the wine's unique character, as different yeast strains produce varying aromatic profiles. The result is often a more textured, nuanced wine with greater individuality - you can taste the specific terroir and vintage conditions that shaped this particular bottle.
