This is really, really, really good Prosecco. We're picking up citrus and white melon up front, layered with floral notes, a touch of apricot and a line of of chalky salinity. The mousse is fine and persistent, the finish bright and crisp, the overall feel effortlessly elegant. Made in the traditional way with 90 days on lees before bottling, this is Prosecco done precisely - polished, vibrant and ridiculously drinkable. The crisp acidity and citrus-pear profile make this Prosecco exceptionally versatile with food. It's brilliant with fresh seafood like oysters or crudo, where the bubbles cleanse the palate between bites. The light body won't overwhelm delicate antipasti, soft cheeses, or herb-crusted fish, while the citrus notes complement Asian cuisine beautifully. Avoid heavy, creamy dishes that would mask its elegant, fine bubble structure.

Masottina represents the artisanal side of Prosecco production, focusing on quality over quantity unlike industrial producers. Three generations of family ownership means accumulated knowledge of their specific vineyard sites, refined winemaking techniques, and commitment to maintaining reputation rather than maximising profit. Serve well-chilled at 6-8°C in tall, narrow flutes or tulip-shaped glasses to preserve the delicate bubbles and concentrate the citrus aromatics. The 'fine' style indicates smaller, more persistent bubbles that require gentle handling - avoid vigorous pouring which can dissipate the mousse. Open just before serving as this style of Prosecco is best enjoyed fresh, and store any leftover bottle with a proper sparkling wine stopper to maintain carbonation for 24-48 hours.
