Why do we love this wine?

We know we've said it before but, it's important to note: Sidewood Estate have, what is considered by some to be, the most state-of-the-art sparkling winemaking facilities in the country, if not the world. Along with a reputation for astonishing wines, they also have a history of criminally under-pricing their own products. With a traditional blend of 65% chardonnay and 35% pinot noir, this wine has wonderfully toasty brioche aromas enhanced by zesty citrus and bright green apple. A harmonious palate of citrus blossom, biscuits and further green apple, is complemented by a clean, mineralic acidity and a loooooooong, elegant creamy finish. Where do we sign up?

The traditional Champagne blend of 65% Chardonnay and 35% Pinot Noir undergoes extended lees aging, developing complex brioche and toast characters that rival premium French Champagnes. The Adelaide Hills' cool climate provides the perfect conditions for developing the wine's signature minerality and elegant acidity.

Premium Australian sparkling wines like this Chloe Cuvée can develop beautifully for 8-12 years from vintage date. The 2017 is currently at its peak drinking window, showing perfect integration of its toasty autolytic characters with fresh fruit flavors.
