Why do we love this wine?

High altitude fruit from Summertown, whole bunch pressed, barrel fermented, and then aged for over four years on lees before disgorgement. This is méthode traditionnelle done with the same rigour and patience you'd expect from a top Champagne house. Ripe stone fruit, fine persistent bubbles, a creamy texture built from all that lees contact, and a finish that goes on and on. At 12.9% alcohol it's restrained and poised - the kind of sparkling wine that holds its own at any table, alongside anything from grilled crayfish to a serious cheese situation. Cellaring potential of 25 years. Though opening one right now is also a completely defensible decision.
