It’s back: our Mofos' favourite rich, buttery chardonnay. You’ve gone crazy for this one, year after year after year, but this time it's different. Like a crazy scientist, we're going BACK IN TIME! This is the same wine you've always loved, but this time, we've done the ageing for you - we love a little throwback!

Don't worry, try one of these

Why do we love this wine?

The round melon, pineapple and guava notes abundantly coat the palate, while succulent french oak flavours linger long. Loaded with texture and harmonious layers of citrus and floral notes to really secure its place as one complex chardy. Time in bottle has acted to soften the edges of this wine, to smooth out any creases, stretch out any sore spots. We could go on for days, the point is, this wine is absolutely singing right now. You’ll have no problems knocking back a glass or two of this beauty whatever the occasion, we’ve certainly been known to crack one come 5pm at Mofo HQ.

Frequently Asked Questions

Adelaide Hills is renowned for producing some of Australia's most elegant Chardonnays due to its cool climate and high altitude vineyards. This 2021 vintage showcases the region's signature minerality while the French oak treatment adds complexity without overwhelming the fruit. The combination of tropical fruit flavours with citrus backbone creates a textural wine that reflects the Adelaide Hills' ability to produce Chardonnays with both power and finesse.

Time in bottle has allowed this Chardonnay to develop greater harmony between its various components. The initial oak integration has softened, allowing the fruit flavours to shine more prominently while maintaining structural integrity. This maturation process has created smoother tannins and more seamless flavour transitions, demonstrating how quality Chardonnay can evolve beautifully with proper cellaring even over a relatively short period.

The wine's medium body and textural style make it perfect for dishes that can match its weight and complexity. Consider pairing with roasted chicken with herbs, creamy seafood risotto, or grilled fish with citrus butter. The French oak influence and tropical fruit notes also work beautifully with Asian fusion cuisine, particularly dishes featuring coconut or mild spices that won't overpower the wine's delicate floral characteristics.

The 95-point Winestate rating and Gold Medal recognition reflect the wine's exceptional balance and complexity for its vintage. Critics have recognised how successfully this Chardonnay expresses its Adelaide Hills terroir while showcasing skilled winemaking through judicious oak use. The Five Star Halliday rating for the winery indicates consistent quality across their range, suggesting this wine represents excellent value from a proven producer.

Serve this Chardonnay at 10-12°C to highlight both its fruit intensity and textural elements without muting the aromatic complexity. Use a medium-sized white wine glass with a slightly wider bowl to concentrate the melon and guava aromatics while allowing the floral notes to develop. Decanting isn't necessary, but allowing the wine to warm slightly in the glass will reveal additional layers of flavour as the French oak integration becomes more apparent.
