Why do we love this wine?

If there’s one thing we know, it’s that our Mofos love a little bit of Margaret River chardy. We’ll give you fair warning: this is not for the lovers of big and buttery. Don’t get us wrong, this goes some of the way there, seeing 9 months in partially new French oak and constant lees stirring (to get all that yeasty, toasty flavour). What is outstanding about this drop is the delightful acid line that cleans the palate in one fell swoop. Or should we say sip. Lemon, grapefruit, and minerality are the stars of the show, with a lingering touch of vanilla and almond. When you’re craving the lighter and the brighter, this is the one for you.

Margaret River's maritime climate and ancient soils create Chardonnays with exceptional balance between richness and acidity. The region's consistent ocean breezes help maintain natural acidity levels, which is why this wine delivers that distinctive 'delightful acid line' that cleanses the palate. This coastal influence allows winemakers to achieve complexity through oak aging while preserving the bright, mineral-driven character that Margaret River is renowned for.

Lees stirring (or batonnage) involves regularly mixing the wine with dead yeast cells during barrel aging, which adds texture, complexity and those appealing brioche and toasty flavours. The process creates a creamier mouthfeel while contributing savoury, biscuity notes that complement the citrus and mineral elements. Combined with 9 months in partially new French oak, this technique builds body and richness without overwhelming the wine's natural brightness.

This medium-bodied Chardonnay's bright acidity and mineral backbone make it perfect for seafood dishes like grilled prawns, pan-seared scallops, or fish with creamy sauces. The wine's subtle oak and citrus notes also complement roasted chicken, pork tenderloin, or creamy pasta dishes. The clean, refreshing finish cuts through rich foods while the underlying complexity from oak aging provides enough weight to stand up to more substantial fare.

Serve this Chardonnay chilled at 10-12°C to showcase its bright acidity and citrus characteristics while allowing the subtle oak and mineral notes to emerge. As a 2023 vintage, it's drinking beautifully now but can be cellared for 3-5 years if stored properly in a cool, dark place. The wine's balance of fruit, oak, and acidity means it will develop more complex honeyed and nutty characteristics with careful aging.

Using partially new French oak means only a portion of the barrels were brand new, with the remainder being previously used barrels that impart more subtle oak influence. This technique allows the winemaker to add vanilla and almond notes without overwhelming the wine's natural fruit and mineral character. French oak specifically contributes finer, more elegant tannins and spice compared to American oak, creating the perfect backdrop for this wine's lemon, grapefruit, and mineral profile.
