Why do we love this wine?

This is one for the riesling purists. A steely, citrus-charged museum-release that allows us all to reap the rewards of someone else's patience. Handled gently from the start, with night harvesting and temperature-controlled fermentation, this one has been held back on purpose, biding its time, waiting to strike when the time is right. Well, let's just say that its timing is impeccable. In the glass, it’s a shimmering pale straw with green glints and perhaps just a hint of gold-like colour-development showing. Aromatically, it’s all lime, citrus and crisp green apple, layered with buttered toast, roasted nuts and a whiff steely wet slate. The palate is tight, focused and bursting with energy. That razor-sharp line of acidity drives through flavours of lime juice, citrus zest and crunchy apple, all finishing bone dry, mineral and long. Although this has seen time in the cellar, its oily texture and impressive mouthfeel are intertwined with youthful acidity. An unbelievable aged riesling.

After ten years, the wine has evolved beyond simple fruit flavours to show classic aged Riesling characteristics like buttered toast, roasted nuts, and that distinctive kerosene note that collectors prize. The extended cellaring has created an oily texture and impressive mouthfeel whilst preserving the razor-sharp acidity that keeps it vibrant and food-friendly.

Kongorong's cool climate conditions are ideal for producing Rieslings with the steely, mineral backbone evident in this wine. The region's terroir contributes to that distinctive wet slate character and allows for the slow, even ripening necessary to achieve the perfect balance of acidity and flavour concentration. This terroir expression becomes more pronounced with age, creating the complex mineral finish that defines premium Australian Riesling.

The wine's bone-dry finish and crisp acidity make it exceptional with fresh seafood, particularly oysters, sashimi, or grilled fish with citrus. The developed nutty, toasty flavours also complement aged cheeses beautifully, while the mineral backbone cuts through rich dishes like roasted chicken or pork with apple stuffing. The textural weight supports more substantial fare than typical young Rieslings.

Serve well-chilled at 8-10°C to showcase the wine's precision and allow the complex aromatics to unfold gradually as it warms in the glass. While this wine is drinking beautifully now, it can continue developing for several more years if stored properly in cool, dark conditions. The combination of youthful acidity and mature flavours suggests it's at a perfect drinking window where both elements are in harmony.
