Why do we love this wine?

There’s nothing mysterious or untoward in the winemaking for this beauty. It’s kept on skins for a short period, then pressed, juice fermented over a couple of weeks, and aged on lees in stainless steel for five months.
As with all Giovanni Rosso’s wines, this is about site. Site, and the ancient grapes (mostly carricante) that are thought to have been grown on the slopes of Mt Etna for at least 1,000 years. So they’ve had time to acclimatise. It’s a gorgeous, zesty-herby white, soft and pillowy and all propped up by a precise and racy acidity. It’s super long, and just bordering on mouthwatering. Quite subtle flavours flitting around the edges, hiding in the shadows and peeking out when you’re not concentrating.

Frequently Asked Questions

Mount Etna's volcanic soils and high altitude create a unique terroir that's dramatically different from Sicily's coastal regions. The ancient Carricante grapes have been adapting to these mineral-rich volcanic slopes for over 1,000 years, developing distinctive characteristics you won't find elsewhere. The combination of intense minerality from volcanic ash, cool mountain temperatures, and these heritage varietals produces wines with exceptional precision and complexity that stand apart from typical Mediterranean whites.

The wooden box presentation reflects both the premium nature of this Etna Bianco and Giovanni Rosso's cult producer status. Etna wines are increasingly recognised as some of Italy's most exciting and collectible whites, with their unique volcanic terroir commanding serious attention from wine collectors. The wooden box also provides excellent protection for the wine during transport and storage, while signalling this is a special bottle worthy of gifting or cellaring.

Serve this Etna Bianco well-chilled at 8-10°C to highlight its racy acidity and subtle herbal nuances. The wine's light body and mineral backbone make it perfect with seafood, particularly shellfish or grilled fish with herbs. Its volcanic minerality also pairs beautifully with goat's cheese, Mediterranean vegetables, or even sushi - the precise acidity cuts through rich textures while the herbaceous notes complement fresh ingredients.

Ageing on lees means the wine rests on dead yeast cells for five months after fermentation, which adds texture and complexity without oak influence. This process creates the 'soft and pillowy' mouthfeel described, while preserving the wine's fresh, zesty character. The lees contact also contributes subtle savoury notes and helps integrate the wine's components, explaining why those 'subtle flavours flit around the edges' - it's a technique that builds depth while maintaining the grape's natural volcanic minerality.

This 2023 Etna Bianco is drinking beautifully now, showcasing its fresh citrus and herbal characteristics at their peak. However, quality Etna whites like this can develop fascinating complexity over 3-5 years, with the volcanic minerality becoming more pronounced and the subtle flavours gaining definition. The wine's precise acidity and heritage grape varieties suggest it will reward patient cellaring, though there's no need to wait if you're curious about this unique expression of Sicily's most exciting wine region.
