Why do we love this wine?

From the volcanic slopes of Mount Etna this is white wine humming with energy and personality. Grown in the mineral-rich soils of Castiglione di Sicilia, these vines soak up the sun by day and cool mountain air by night - perfect conditions for crafting something vibrant, tense and utterly delicious. On the nose, it’s all lemon zest, yellow apple, jasmine and a sprinkle of sea salt. The palate bursts with white peach, fresh herbs and bright acidity, finishing with a salty snap that keeps you coming back for another sip. It’s youthful, minerally and full of life - a true taste of Sicily’s coastline in one glass. Perfect with grilled fish, fried calamari or a big bowl of mussels.

Frequently Asked Questions

Mount Etna's volcanic soils create a unique terroir that's dramatically different from Sicily's coastal regions. The mineral-rich volcanic ash and pumice stone provide exceptional drainage while imparting distinctive saline and mineral characteristics to the wines. The high altitude vineyards experience significant diurnal temperature variation - hot days followed by cool nights - which preserves natural acidity and develops complex aromatics that you simply can't replicate elsewhere in Sicily.

Serve this Etna Bianco well-chilled at 8-10°C to highlight its vibrant acidity and mineral backbone. The wine's natural salinity and bright character make it exceptional with seafood - the volcanic minerality creates a beautiful bridge between the wine and oceanic flavours. Consider decanting it briefly if serving immediately after opening, as the extra aeration will help the jasmine and herb notes bloom while softening any initial tartness.

Etna Bianco DOC wines are predominantly made from Carricante, an indigenous Sicilian variety that thrives in volcanic soils and contributes the wine's signature minerality and aging potential. The blend often includes Catarratto, which adds body and fruit character, along with small amounts of other local varieties like Minnella Bianca or Grecanico. These native grapes have evolved specifically to handle Etna's challenging volcanic environment, creating wines with unique personality that reflect their ancient Sicilian heritage.

While delicious now in its youthful, energetic state, quality Etna Bianco can develop beautifully over 3-5 years. The volcanic minerality and natural acidity provide excellent structure for aging, allowing the wine to develop more complex honeyed and nutty characteristics while maintaining its distinctive saline finish. However, if you enjoy the current bright citrus and herb profile, there's no need to wait - this style of wine offers pleasure at every stage of its evolution.

The 'salty' character comes from the wine's interaction with volcanic soils rich in minerals like potassium, magnesium, and trace elements from ancient lava flows. Vines growing in these soils absorb these minerals through their root systems, which then influence the wine's flavour profile. The porous volcanic rock also provides excellent drainage, stressing the vines just enough to concentrate flavours while the mineral-rich environment creates that distinctive 'sea salt' sensation that makes volcanic wines so food-friendly and memorable.
