Why do we love this wine?

Picked during the cool of night and rushed to the winery, the fruit was handled with ultimate care to preserve its purity and brightness. Fermented with a (secret) custom yeast to dial up the flavour and add an extremely pleasing texture, this wine was bottled early to lock in those lifted aromatics and fresh fruit character. A beautifully made, no-fuss drop that’s as refreshing as it is flavourful.

Frequently Asked Questions

Night harvesting is crucial for preserving the delicate aromatics and fresh acidity that make Pinot Grigio so appealing. The cooler temperatures prevent premature fermentation and oxidation during transport, while maintaining the grape's natural brightness. This technique is particularly important in Margaret River's warm climate, where daytime heat can quickly diminish the crisp, mineral qualities that define quality Pinot Grigio.

Margaret River's maritime climate provides the perfect balance of warm days and cool nights that Pinot Grigio thrives in. The region's ancient granite soils contribute to the wine's mineral backbone, while ocean breezes help retain natural acidity. This combination allows the variety to develop complex citrus and pear flavours while maintaining the crisp, refreshing character that makes it such a versatile food wine.

The winemaker's secret custom yeast strain enhances both flavour intensity and mouthfeel without masking Pinot Grigio's natural characteristics. Different yeast strains can emphasise specific flavour compounds, potentially bringing out more pronounced citrus notes or adding subtle textural complexity. This careful selection demonstrates the producer's commitment to crafting a distinctive wine that stands apart from mass-produced alternatives.

This wine's citrus and mineral profile makes it exceptional with seafood, particularly oysters, grilled fish, or prawn salads. The pear notes complement soft cheeses and light pasta dishes, while the crisp acidity cuts through creamy sauces beautifully. Its refreshing character also makes it perfect as an aperitif or paired with Asian cuisine where its clean finish won't compete with delicate spice profiles.

Early bottling captures the wine at its peak freshness, preserving the lifted aromatics and vibrant fruit character that define quality Pinot Grigio. This technique prevents the wine from developing heavier, more oxidised flavours that can occur with extended aging. The result is a wine that showcases the pure expression of the grape and terroir, maintaining the bright, energetic character that makes it so food-friendly and refreshing.
