Given that their family winemaking history goes back to the 1300's (yes, really), it's no surprise that Wills Domain routinely knock it out of the park. They're stylistically perfect, showcasing both region and varietal to a tee. If you were to close your eyes and conjure an image (with your tastebuds) of what you want Margs chardy to be, this is it.

Why do we love this wine?

The sheer amount that is going on in this wine is something to behold. Mineral, creamy and concentrated - time and time again this has emerged as an iconic Mofo wine. There's a lick of lime-like acid that gathers on the gums, lifting the juicy yet creamy palate. The wine spent 9 months on lees in barrel with only a minimal percentage of malo to allow the limey minerality to be preserved in this full and rich chardy that sees freshness expertly prevail throughout. Mouthwatering and persistent from start to finish – This is Margs chardy through and through.

"Pale straw with green hue and brilliant clarity. The aroma is complex and layered, revealing white peach, lemon curd and subtle cashew. The palate is taunt, structured and refined, combining concentrated stone fruit with vibrant acidity. Carefully integrated oak adds creaminess and depth with a mineral thread providing precision and uplift. The finish is full with richness and power. The structural integrity supports long-term cellaring. 96 Points"

Frequently Asked Questions

While Margaret River is renowned for elegant, mineral-driven Chardonnays, The Coveted pushes boundaries with its full-bodied richness while maintaining the region's signature freshness. The minimal malolactic fermentation preserves the lime-like minerality that Margaret River is famous for, but the 9 months on lees creates an unusually creamy, concentrated texture. This approach showcases how modern winemaking can amplify a region's natural characteristics rather than mask them.

The 9-month lees contact is crucial for developing the wine's signature creamy texture and complexity. Lees are dead yeast cells that break down slowly, releasing proteins and compounds that create a richer mouthfeel and add savoury depth. This extended contact also helps integrate the oak influence, preventing the wine from becoming overly woody while building the cashew and tropical fruit flavours that define this Chardonnay's personality.

Malolactic fermentation converts sharp malic acid into softer lactic acid, creating a buttery, creamy character. By using only minimal malo, Wills Domain preserves the wine's natural acidity and lime-like minerality that makes Margaret River Chardonnay so distinctive. This technique allows the wine to be both rich and fresh - a difficult balance that requires precise timing and expert winemaking to achieve successfully.

Serve this wine slightly warmer than typical whites - around 10-12°C - to fully appreciate its rich, creamy texture and complex flavours. The full body and mineral backbone make it perfect for pairing with richer dishes like roasted chicken, lobster with butter sauce, or creamy pasta dishes. Decanting isn't necessary, but allowing it to open in the glass for 10-15 minutes will reveal more of its tropical fruit and cashew characteristics.

James Halliday's five-star rating represents the pinnacle of Australian winery recognition, awarded to fewer than 100 wineries nationwide. This rating considers not just wine quality but consistency, innovation, and overall excellence across a producer's entire range. For Wills Domain, this recognition validates their position among Australia's elite producers and suggests their winemaking philosophy consistently delivers exceptional results across multiple vintages and styles.
